Wedding cakes and dessert table heaven

For the past few weeks my social media has been full of beautiful wedding cake progress. I don’t do many wedding cakes now I’m so busy with teaching you lovely lot. But… my beautiful sister was getting married so that meant one huge cake table for me to do! Yay!

I actually started making all the flowers in February. Every time I had a class with a rose  to make I would make it in white or pale grey so I could reuse it. Flowers store for years and years. Just keep them in a cake box, out of direct sunlight and they’ll be fine.

You can see on the first photo below, these flowers are stored in a cake box, surrounded by packaging to keep them safe.

The second photo is a great way of planning out your flowers. It can be tricky when putting a cascade together so I made a paper template of the exact size of the wedding cake (tricky to see in white against white!! Oops!) then placed the flowers on the template. You’ll know if you need a few more flowers this way.

The last photo is the cake dowelled and temporarily stacked so I could mark out where the cascade was going to go as I had piping work I wanted to do around the flowers.

I spent a week getting this huge cake table done and I loved every second. It was so special to be a part of my sisters special day and create something pretty wow. Even if I do say so myself!

A lot of the cake I used I bought from sweet success ( Super yummy baked cakes so all I had to do was decorate them. This saved me so much time with teaching the cake classes too.  From Sweet Success we had chocolate, vanilla, carrot cake and red velvet. I baked sticky toffee cupcakes, sphere cakes, cookies and macarons.

Im no macaron expert but after a few attempts, I was happy ( ish!) with them and they tasted yummy. I decorated the cookies with fondant then piped all the names of the guests on them, as well as lots of cute little hearts. I used Purple Cupcakes Foam domes to prep my cupcake toppers. This ensured they were perfectly domed.

The table all set up at the very beautiful Cripps Barn in Cirencester. The venue was amazing and I loved this backdrop for the cake. So here we have one huge 4 tier cake, all tiers 6 inches deep of Vanilla, Chocolate and Lemon Cake, Sticky toffee cupcakes, carrot cake mini cakes, red velvet cake pops, vanilla macarons, sticky toffee sphere cakes and 65 cookie favours. The cookies are to die for. A cross between shortbread and a biscuit. Utterly delicious and lasts a good week to 10 days. See our recipe section of our website for the recipe.

I’m happy to answer any questions you have so bombard me with them. What do you like best? Cake pops were my favourite by far. Yum YUM!!

Lots of cake love

Dani xx

  1. Just found this when looking at your classes, love the colours and the flavours too. I am curious how you made those gorgeous flowers so far ahead and still managed to get them to cascade even though they must have been really hard, can you share how you achieved this please?
